Kakuni - Braised Pork Belly

Ingredients (serves 2)

  • - 600g Pork Rasher

  • - 1 Daikon

  • - 1 1/4 cup Water

  • - 1/4 cup Cooking Sake

  • - 4 Tbsp sugar

  • - 2 1/2 Tbsp Soy Sauce

  1. 1. Cut the pork into large bite sice pieces and place the pork into a pot of water and bring to the boil. Once boiled, reduce the heat to a low to medium heat and continue to boil for about 2 hours. After boiled rince in cold water to rid of any excess fat.
  2. 2. Place the water, cooking sake, sugar and cooked pork into a pot and bring to a boil. Add the soy sauce and cover with foil (drop lid style) on medium heat. When the liquid is reduced to about half turn the heat up high and pour the mirin in a circulating motion.
  3. 3. Put all the contents into a bowl (including the sauce!). Kakuni can also be served on rice as the sauce makes an umbelievable combination with rice!


When cutting the pork into bite size pieces, make sure they are larger than usual as the pork shrinks slightly!
